The period from the late 1940s through the 1970s was witness to a remarkable transition in Bangkok: modern Thailand was emerging out of the rich Siamese past and the food of the period reflected this. Many cookbooks were published during this time containing Thai, Chinese and Western recipes. Most books were anonymous but some were written by prominent cooks. In a nod to Central: The Original Store’s early history, Aksorn searches through its own collection of cookbooks to select an inviting volume from that era from which it devises a regularly changing menu.
